Sushi chef de partie

The role
We are looking for a sushi chef de partie to work under the sushi chef to run the sushi section during your shift, working lunch 1030-2:30 and dinner service from 5:30 – 10:30pm 5 out of 7 days. you will prep amazing fish and rice for some amazing sushi dishes, which will be of a high standard. You will prep the sushi and then in service plate your award winning standard dishes. One day a week you will be on sushi on your own and the other days working with the sushi chef. This role will include all the normal sushi chef de partie duties. 

Experience
We are looking for a sushi chef de partie with a fine dining sushi experience and able to cope in a 38 cover establishment with a background as a sushi chef. You will have amazing knife skills, fish knowledge and presentation skills.
